Amy's Lasagna

Quick and easy lasagna, we even cheat by using the oven bake noodles.

Ingredients:

One Box Oven Bake Lasagna Noodles

  • One Jar Marinara Sauce (I use Prego)

  • One Can Petite Diced Tomatoes (I usually get either fire roasted or with garlic and spices)

  • One 16 oz Block Mozzarella Cheese, shredded

  • One Pound Italian Sausage (I use Bob Evans roll), browned and drained

  • One 7.5 oz Tub of Chive and Onion Cream Cheese

  • Optional: minced garlic, parmesan cheese, fresh parsley or basil

Instructions:
  1. In a mixing bowl, combine Marinara sauce, Diced Tomatoes, and garlic (if using). 

  2. In a 9x13 baking dish, spread a ladleful of sauce on bottom and spread to coat.

  3. Add a layer of noodles, breaking to fit as needed.

  4. Cover noodles with a ladle of sauce (about 1/3 of remaining sauce), sprinkle with 1/3 of sausage, add about 1/3 of the cream cheese in dollops spread across noodles, and top with about 1/3 of your mozzarella.  

  5. Repeat two more times until you've used all your filling ingredients.  Top with some parmesan if desired.

  6. Cover with foil and back at 375 for 30 minutes.  Remove foil and continue to back for an additional 15-25 minutes, until the cheese on top is melted and starting to brown.  

  7. Feel free to top with chopped herbs and parmesan.  Let sit for at least five minutes before you cut into it.
