Pineapple Side Dish

Whether it's from cousin Marie or Aunt Lisa, this dish that sounds strange on paper is always a hit at family potlucks.

Ingredients:

2 Cans of chunk pineapple, drained (16 oz)

2 Cups shredded white cheddar cheese

¾ Cups Flour

1 ½ Cups Sugar

1 Sleeve Ritz Crackers, crushed

1 ½ Sticks Margarine, melted


Instructions:

Spread pineapple in a 2 quart casserole dish

In a bowl, mix together cheese, flour, and sugar

Cover pineapple with cheese mixture

Sprinkle crushed Ritz Crackers on top

Pour melted Margarine on top

Bake for 30 minutes at 350 or until the top is nicely browned.


Can be served hot or cold

Note: I usually use one can of pineapple bits and one can of pineapple chunks.  I also always use butter instead of margarine.
