Sausage Balls

A tasty breakfast or appetizer, really great once the weather cools down.

Ingredients:

  • 1 lb Breakfast Sausage. I usually do the Bob Evans roll but any would work, including spicy.

  • 1 8 oz block of Cream Cheese, softened.

  • 1 cup of shredded Cheese, again your choice. I usually use a sharp cheddar.

  • 1 1/4 cups of Bisquick.

Steps:

  1. Preheat the oven to 400 and line a large baking sheet with parchment paper.

  2. Add sausage, cheese, and cream cheese to a mixing bowl and mix at low speed until thoroughly combined.

  3. Add a cup of Bisquick and mix. Add more as needed (typically about 1/4 cup) until it comes together and looks less sticky.

  4. Form into balls and place on the cookie sheet. Makes about 24 balls.

  5. Bake 16-20 minutes until the bottoms are brown and crunchy and the tops are starting to brown.

Notes:

  • I use a stand mixer with the paddle attachment, but you can mix by hand or use hand mixer. It just might be a little less smooth but will still taste good.

  • I've subbed in the Red Lobster biscuit mix for the Bisquick before and it works the same. A little extra flavor but a little more $ than Bisquick.
