Sweet Potato Casserole

A Thanksgiving classic, the sweet potato casserole recipe from the McElroy family.

I listen to a podcast called Wonderful, where a married couple discusses things they like. They did an episode focusing on Thanksgiving foods, bracket style, and it came down to their family sweet potatoes. Later, one of his brothers posted the recipe while making his Thanksgiving side dishes. I saved it and tried it the following year. It’s rich and sweet and really is a very nice Sweet Potato Casserole. I’ve enjoyed making it each year since. Thank you to Leslie McElroy for the recipe, it makes me happy to see her family keeping her legacy a part of their celebrations and grateful they were willing to share it with us.

Casserole Ingredients:

  • 3 cups mashed sweet potatoes

  • ½ cup white sugar

  • 2 eggs, beaten

  • ½ cup milk

  • 4 TB melted butter

  • ½ tsp salt

  • 1 ½ tsp vanilla

Topping Ingredients:

  • ½ cup brown sugar

  • ⅓ cup flour

  • 3 TB butter

  • 1 cup chopped pecans

Instructions:

  1. Preheat the oven to 350.Mash sweet potatoes with a mixer. Once smooth, add other casserole ingredients and blend together.

  2. Put mixture in a 9x13 baking dish.Mix together topping ingredients and sprinkle mixture on top of casserole

  3. Cover with foil and bake for 20 minutes. Remove foil and cook additional 15-20 minutes

Note: You can cook your sweet potatoes however you’d like. I usually do mine in the instant pot. I also usually add a shake or two of cinnamon to the topping.
